Spicing things up in the kitchen just got easier with this super simple, five ingredient, one-pan fajita dish.

If you are craving Mexican, this dish is for you. Benefitting from being high in protein, vitamins and minerals, you can curb those cravings whilst knowing you are nourishing your body in the process.

This super simple fajita chicken recipe is perfect for meal prepping, providing days worth of protein-packed lunches or dinners. Accompany this dish with a healthy source of fat (e.g. avocado), carbohydrate (e.g. rice) and some veggies for a scrumptiously balanced meal.

What sides to have with your fajita chicken?

If you are going all out and having a cheeky Mexican fiesta-themed dinner, then cheesy nachos are a must. Heat your oven to around 180˚C and add a bag of your favourite tortilla chips to a deep pan. Coat the nachos with a jar of fajita sauce, jalapenos (if you like them spicy) and top it off with some cheese (or vegan alternative). Place in the oven on medium heat and bake until the cheese has melted, and you are left with some crispy, cheesy, heavenly nachos.

I prefer Mexican bowls to burritos, with my go-to additions being:

If you are looking to spice things up with a Mexican fiesta inspired date night, then you are going to need some drinks to accompany your yummy Mexican dishes.

Nothing says Mexican fiesta more than a cheeky margarita, with endless flavours to choose from. I am obsessed with frozen raspberry, strawberry and mango margaritas. They are super simple to make, requiring frozen or fresh fruit, tequila, lime juice, triple sec, a sweetener and ice.

Step 1 Rub a lime wedge around your two glasses and then dip the glasses in salt.

Step 2 Add 2 cups of fruit (raspberries, strawberries or mango), 1/4 cup of tequila, 2 tablespoons of lime juice, 2 tablespoons of triple sec, 2 tablespoons of sweetener (agave syrup, honey or maple syrup) and 2 cups of ice to your blender.

Step 3 Blend until a slushy consistency has formed and pour into your two glasses.

Easy fajita seasoning

Say goodbye to pre-packed fajita seasoning and hello to this super simple, preservative and additive-free homemade fajita seasoning.

In a large bowl, combine 4 tablespoons of chilli powder, 1/2 teaspoon salt, 1 teaspoon garlic powder, 1/2 teaspoon cumin and 1/2 teaspoon black pepper. Mix thoroughly with a spoon. Simple!

I like to triple or quadruple this recipe and place it in a spice jar, so I have a pre-made fajita seasoning to grab when I need it.

Making this simple fajita chicken recipe

This recipe could not be easier, requiring one bowl and one large skillet or frying pan.

Step 1 Chop up the onion, mushrooms and bell peppers.

Step 2 Dice the chicken into thin slices; turkey breast would also work well.

Step 3 Combine the vegetables and chicken in a large bowl.

Step 4 Season the mixture with apple cider vinegar, spices, lime juice and crushed garlic.

Step 5 Heat some olive oil (or coconut/avocado oil) in a large skillet and add the fajita mixture. Cook for around 20-25 minutes on medium heat, stirring throughout. Alternatively, for a hands-off cooking method, add the fajita mixture to a large baking tray lined with baking paper. Bake for around 20-25 minutes (stirring halfway through) at around 180˚C or until the chicken has cooked through.

Ingredients

For the chicken:

  • 500g chicken breasts (or turkey)
  • 23 large bell peppers
  • 6 small mushrooms (optional)
  • 1 medium onion
  • 1 tbsp apple cider vinegar
  • 2Tbsp lime juice
  • 1/4 cup cilantro
  • 1Tbsp olive oil (or avocado/coconut oil)

For the fajita seasoning:

  • 4Tsp chilli powder
  • 1/2Tsp salt
  • 1/2Tsp cumin
  • 1Tsp crushed garlic (or powdered if making in advance)
  • 1/2Tsp black pepper

Instructions

  • Chop up the onion, bell peppers, mushrooms and dice the chicken
  • Add the vegetables and chicken to a large bowl and mix thoroughly
  • Add the fajita seasoning, lime juice, olive oil and apple cider vinegar
  • Mix the seasoning with the contents of the bowl until evenly coated
  • Add the fajita mixture to a large skillet and cook for around 20-25 minutes or until the chicken is cooked thoroughly.

Notes

1 Cup = 250ml (metric measure)
